烏龍湯麵類的招牌，就是這碗上湯烏龍麵了，穗科的湯麵主要就是湯頭的差別，各種濃淡風味各有愛好者，上湯是當中口味最清淡的，也是其他口味的基礎本湯。

一碗和風的湯烏龍，當然是昆布湯頭無二，食材滿滿的有點看不出來，湯色是一等的清澈，近乎無油花，烏龍麵之外，更有時蔬和我喜愛的豆皮，再撒上京水菜和山芹菜，外表十分清麗樸實。
