上勝晩茶の製造現場に行かせてもらう機会がありました。四国は後発酵茶の宝庫で、とてもユニークな作り方を身近で見れました。今後の製茶のヒントになるような場面も多々あり、興奮は止みません。何点か驚いた点を述べると、1.茶の木は在来(品種茶はあまりないみたい)2.自然仕立てのしごき摘み(文字通り手で茶葉をむしり取ります)3.桶に漬け込む 4.芭蕉で蓋をする(殺菌作用があるみたいです)5.一ヶ月間、嫌気発酵させる 6.天日干し(真夏が天日干しに向いている) 上勝の中でも色んな農家さんが晩茶を作っていて、同じ晩茶でも
