アスペルジュソヴァージュとはフランス原産の「野生のアスパラ」のこと。野生のアスパラとは言っても厳密にはアスパラではなく、フランスの野山に自生している山菜。

形はひょろひょろっと細長く、淡い緑色。先は稲穂のような形をしていて、「つくし」にもよく似ています。独特のトロッとした食感とアクの強めな苦味が、初夏の訪れを感じさせる食材。
