麺類の美味しさの1つに「麺のコシ」というものがあるかとは思います。特にお蕎麦は新鮮なそば挽き立て、打ち立て、茹で立てのいわゆる「三立ての原則」が方程式として成り立つ強い麺のコシは食べると衝撃を覚えること間違いなしです。
