年に一度の名古屋出張。徹夜で350キロ走破してそのまま朝からイベント出展。ヘロヘロになりながらもなんとか遠征1軒目。
豚骨ベースで微粉末状になった煮干を大量投入したスープはレンゲでフーフーしても波が立たないくらい濃厚。ビターな苦味に満ち溢れていて乗せられたおろし生姜を溶かしてもほんのり香りが付く程度。
麺は濃厚煮干系には定番になった低加水パキパキストレートタイプ。
バラ肉チャーシューは提供直前にバーナーでひと炙り。香ばしくて美味しい。
