当店で使用しているシャンパーニュのReneColletさんを見学して来ました。
とても暖かく迎えていただき嬉しかったです。ワイン造りには造り手の人柄が出ると良く言いますが、それを改めて実感致しました。
葡萄は小鳥のさえずりが綺麗に響き渡る広大な土地で伸びやかに育てられてました。
醸造の特徴としてはプレスして最初に出てくる一番搾り(キュヴェ)のみを贅沢に使用してます。また、シャンパーニュでは非常に珍しい温度管理の出来る樽を所有しており、14度で緩やかに樽発酵を行う事を可能にし、樽香や果実味をきれいに表
