懐石・八方さんの「仕込み見学」させていただきました

早朝、上新屋にある「懐石・八方」さんにて撮影の仕事。その合間に大将の寺田さんが仕込みの様子を見せてくださるとの事で、興味津々見学させてもらいました。

料理の基本とも言える「だし」ですが、本物にこだわればこだわるほど奥の深い世界。調理場に入れてもらうと、周りは芳醇な鰹節の香りに包まれています。一番だしを取り終えて、これは二番だしを取っているところだそう。大鍋に箸が立つほどの量の鰹節が投入され、じっくりと煮出されています。こんな光景を見るのは初めてだ
