パートブリックという春巻きのような薄い生地で宮城産の穴子を包んでフリットにしました。
その下にはフレッシュのパイナップルのコンカッセを合わせました。
実山椒を加えた卵黄のソースに熱を加えながら空気を含ませてつくったオランデーズソースを添えて。
