Ølとはビールの意。
そこにオーナーの名前に共通する頭⽂字Toを加えて、【To Øl】という名前に。
Tore Gynther（トーレ）とTobias Jensen（トビアス）、
ふたりのビール好きが集まってその歴史がはじまりました。
2005年、当時学⽣だった若き彼らはデンマークのビールがいかに退屈かを語り合い、
彼らが出した答えは「⾃ら醸造する」ことでした。
彼らに醸造を伝授したのは当時サイエンスティーチャーであったミッケル・ボルグ。
