「東積丹産の海水ウニ」をご存知ですか？

濃厚な味わいが特徴の「エゾバフンウニ(右)」と、あっさりとした口当たりで独特の甘みがある「キタムラサキウニ(左)」の2種類。一般的なウニは、形崩れしないように保存料としてミョウバンを使用するため、どうしても自然の味わいが損なわれてしまうのに対し、こちらの「海水ウニ」は殻から取り出したままの風味をそのまま味わえるという優れものなのです。海鮮丼にしてみたらまさに「海の宝石箱」になりました。
