早いもので９/17、ムッシュが亡くなって一年か経ちます。
ムッシュに40年に渡りついてきたシェフ藤森としては、複雑です。

昔まだ藤森が銀座店にいた頃、ムッシュは｢関西で売れてるから、明太子のフランスパンやりなはれ！｣と言いました。

その時は若気のいたり、フランス風にこだわるあまり｢絶対嫌です！｣と頑として抵抗しました。
