「白身魚と春野菜のオープンサンド」
全粒粉入りの自家製フォカッチャを使用した、ボリューム満点のオープンサンド。
国産のタケノコを糠と鷹の爪で煮たものや、レンコンのピクルスは必須。
あとはその日に仕入れた春野菜をたっぷりのせます。
そら豆や菜の花、アスパラやラディッシュなどなど。
それからフレッシュなグリーンピースが仕入れられたらラッキー。
生から茹でたグリーンピースは格別の美味しさです。
自家製マヨネーズ、粒マスタードで作ったドレッシング、ディル風味のヨーグルトソースでさっぱり仕上げます。
