洋菓子フィレンツェとヴィンチパンドーロで販売しているPACE（パーチェ）のジャム。パティシエがフルーツから作っているジャムなんです。そんなジャムというだけあって、焼き菓子とも合うわけです。
試しに四葉のマドレーヌのすっきりとした味わいにアプリコットジャムを合わせてみました。口に入れるとまずあんずの甘酸っぱさがブワッときます。ジャムというかフルーツをそのまま食べているかのようなフレッシュさを感じる味わい。マドレーヌの甘さが逆に引き立ちますねこれは。
