メキシコの代表的なお料理、エンチラーダスをヴィーガン仕様で作りました。
ピントビーンズのペーストとヴィーガンチーズをコーントルティーヤで包み、特製エンチラーダスソースをかけてこんがり焼き上げました。
仕上げにアボカドとサルサソースをたっぷりとのせて。
無農薬玄米で作ったメキシカンライスを添えたボリュームある一皿。
