地元、伊勢崎市で作られた特別な茄子、宵葉月（よいはづき）。
皮は薄く、身は柔らか。とろけるような食感の生食専用刺身茄子です。
スアーヴでは香味野菜をたっぷり添えて、カルパッチョ風に仕立てました。
まるでフルーツのような瑞々しさ！
