I love the twist of making these a GINGERBREAD MAPLE cookie vs a traditional frosted gingerbread cookie for a few reasons. . 1) They are much easier to make. 2)They are SOFT and CHEWY. 3) They get gobbled up quick which forces you to bake another batch. .
